This cast iron Dutch oven with porcelain enamel coating is a versatile and durable kitchen essential. Crafted by the family-owned Lodge, it is perfect for cooking, marinating, refrigeration, and freezing. The color porcelain enamel can be used on various cooktops, including gas, electric, ceramic, and induction, as well as in the oven, but it is not recommended for outdoor grills or open flames, nor is it suitable for microwave use.
The Lodge Dutch oven is cast from molten iron in individual sand molds, ensuring superior heat distribution and retention. The porcelain surface eliminates the need to season the cast iron, as it is chip-resistant and easy to clean. The tightly fitting lid seals in moisture, enhancing the excellent heat retention and reducing the energy required for cooking.
Two layers of hard, glossy porcelain enamel coat the vessel, rendering it non-reactive with food and making it both chip-resistant and easy to clean. The black rim on the pot is made of matte porcelain, not exposed cast iron. Although the Dutch oven is dishwasher safe, hand washing with warm soapy water is recommended to preserve its original appearance.
Porcelain enamel on cast iron is a unique combination that results in a durable and versatile cooking surface. The glass frit, or particulate of glass, is applied to the cast iron and then baked at high temperatures between 1200 and 1400°F, creating a strong bond. This process produces a material that is heat-tolerant and impervious to water and other consumables.
The smooth, porcelain-enameled interior of the Dutch oven minimizes sticking, promotes caramelization, and resists staining. The even heating throughout the bottom and sidewalls, as well as the tightly fitting lid, ensure consistent and efficient cooking, whether you're preparing a pot roast, stew, or a large batch of beans.
